Chickpea curry and Whole Wheat Flatbread Recipe

These were one of my favourite things to eat on the Daniel fast and I would like to share it with you all.

Flat Bread Recipe


Ingredients

2 Cups of whole wheat flour
2 Tablespoons of olive oil
1/4 cup of water (use more if needed)
Salt to taste


1. Mix flour and salt in a large mixing bowl.

2. Make a hole in the flour and using your hand, mix in oil then add the water gradually to form a soft dough.

3. Knead for five minutes, return to the bowl, cover with cling film and let it sit for 25 minutes.

4. Heat a large pan over medium high heat until very hot.

5. Split the dough into the amount or sizes you would like the bread then roll out dough into a flat round shape and place in pan, cook for about 30 secs on one side turn over and add a little drizzle of oil in the pan. You will see the bread puff up, turn over and cook for another 20 seconds.

6. Repeat until all the dough is used.





Chickpea Curry





Ingredients

2 cans of drained chickpeas
2 Large tomatoes diced
1/2 a large onion
1 tablespoon of corn flour
2 cloves of garlic
2 tablespoons of olive oil
1 small red chilli
1 teaspoon (tsp) of tumeric powder
1 tsp ground cumin
1 tsp garam masala
1 tsp chilli powder
salt (to taste)

1. Heat a large pan on a medium heat then add the oil, onion, chilli pepper, cumin powder and cornflour. allow the oil to be absorbed by the cornflour and the onions soften.

2 Next add the diced tomatoes and cook until they soften and break down.

3. Add the garlic, turmeric and chilli powder.

4. When the everything is combined and cooked add the chick peas. I have put 2 cans as I was cooking for a lot of people but you can use 1 can depending on how much people you are cooking for! If you would like a smooth sauce you can blend/liquidise your sauce before adding the chickpeas.

5 Next add salt and garam masala for taste and a cup of water. Let everything boil then bring the curry to a simmer. 

6. The chickpeas should soften after 5-10 minutes, then smash some of the chickpeas to help thicken the curry.

This curry goes so well with the flat bread hope you try it, you won't be disappointed.
